When she moved to Miami, Chef Elida hoped to express her passion for the culinary arts. She is being doing just that upon opening the —now well known french restaurant— Charlotte Bistro.
Elida’s love affair with food began as a child in Venezuela. Having shared many of life’s most memorable moments with loved ones over a table laden with scrumptious delicacies, full of tradition and flavor.
Her passion made her look for great horizons: She graduated from the Institut Paul Bocuse in Lyon, France, where she earned the title of Diplome Etudes Superiores en Arts Culinaires et Gestion, before continuing to work at several prestigious restaurants around France. Elida honed her craft in the profound and complex art of French cuisine at such Michelin star rated restaurants as Michel Bras, Pierre Orsi and L’Alexandrian.
Missing home, she returned to Venezuela to open her first restaurant, Cantalamesa. Located in the idyllic setting of the lush and verdant gardens in the house she was born, Cantalamesa was the predecessor to Charlotte Bistro. Guests dined in small groups nightly, indulging in Elida’s creations, made from the freshest produce in the daily markets.
In 2009, Elida and her family decided it was time for a bold move. They relocated to USA, and Charlotte Bistro was born, a whimsical artwork of love and casual elegance.
Elida and her culinary team work as family to create an exceptional and unpretentious dining experience for guests who crave genuinely warm service and unforgettable cuisine. With an ever-changing menu, Elida hopes to embrace guests as family and indulge them in her intense love for great food.
